Lemon Crumble Muffins

This recipe is a really special spring treat .  It is great on a weekend, birthday, or for a special holiday, like Mother’s day.
MUFFINS:
1 1/2 cups butter or margarine, softened
3 cups sugar
6 eggs
1 1/2 cups sour cream
3 tablespoons lemon juice
2 tablespoons grated lemon peel
4 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt

CRUMBLE TOPPING
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1/4 cup cold butter or margarine

GLAZE:
3/4 cup confectioners’ sugar
1/3 cup lemon juice

Directions:

1. For crumble Topping, in a bowl, combine flour and sugar. Cut in butter until crumbly; set aside. For muffins,
cream butter and sugar in a mixing bowl. Beat in eggs, sour cream, lemon juice and peel.
Combine flour, baking soda and salt; stir into creamed mixture just until moistened. Fill greased or
paper-lined muffin cups two-thirds full. Sprinkle with reserved crumb topping. Bake at 350 degrees F
for 25-30 minutes or until muffins test done. Cool in pans for 5 minutes before removing to wire racks.
Combine glaze ingredients; drizzle over muffins.

It’s hard to believe October is here! Cold weather is coming in, and winter will be hear before we know it.

Here is a wonderful Apple Crisp recipe.  It tastes wonderful, and is a nice warm dish for any evening!

  • 10 cups  apples, peeled, cored and sliced
  • 1 cup white sugar
  • 1 tablespoon flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup water
  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, melted
  1. Preheat oven to 350 degrees F
  2. Place the sliced apples in a 9×13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  4. Bake at 350 degrees F  for about 45 minutes.
